Details

This class is hands on, which means you and your classmates will be doing all the prepping of ingredients and cooking of dishes. You will also be enjoying the fruits of your labour as your dinner along with your classmates!

Location

I welcome you to our home in SE1, which is a 2 min walk from Borough Station. Feel free to take a night-time stroll along the Thames after dinner to take in the sights!

In this class, you will make five dishes that you will be able to whip up on your own on a busy weeknight. You will familiarize yourself with dozens of spices used in everyday Indian cooking. You will smell, taste, and touch whole spices, in order to understand the flavor profiles that each spice contributes. We will cover a variety of dishes and give you a playbook to apply your newfound skills to any other Indian dish you wish to make. They can be tuned to your taste – for a healthy everyday meal, or even jazzed up for a party pleaser! You are encouraged to taste at every stage of cooking, and become familiar with troubleshooting techniques when things don’t quite go the way you want it to as it happens so often in kitchens.

The menu that you’ll be cooking up includes (changes possible according to dietary restrictions):

Chicken / Salmon / Paneer Tikka
Goan Coconut Prawn
Dal Tadka
Bhindi (Okra) Masala
Steamed Basmati Rice

Tips

In this casual, home setting, you’re free to make mistakes without judgement, chop like you’ve never seen a knife before, and ask any burning questions you had about this intimidating and vast field of Indian cooking.

You will end the night eating what you’ve prepared (no pressure), and maybe you and your classmates can head to the pub after dinner!

I can teach you tips and tricks that I picked up during my time working at restaurants in San Francisco, as well as the Le Cordon Bleu Basic Cusine. You’re in safe hands!
